Paddlefish Restaurant at Disney Springs


After arriving in Walt Disney World around dinnertime with no reservations on our latest trip, we headed over to Disney Springs to see what was available and Paddlefish caught our eye with the beautiful boat shining on the water.  There was space for us at the bar where they serve the full menu, so we settled right in for what was about to be a delicious dinner.

We started with cocktails and were very impressed by not only the cocktail selection, but also the bartender's knowledge and expertise on the menu to guide us through our selections tonight. 
At the recommendation of the staff, we had to give the Lobster Corn Dogs a try for our appetizer.  These were so fun and very delicious (and I don't normally like lobster!) They are most like a corn dog in that they are on a stick, but don't let that stop you from giving these a try. 
Next up it was time for our entrees, we both opted for options "from the port" since we were in a seafood inspired restaurant, we couldn't resist.  I had the Mahi with Caponata, salsa verde, and herb roasted potatoes but with everything on the side because I wasn't sure how I would feel about it all together - I was wrong, it was all amazing together!  I did sub asparagus for potatoes because I don't like potatoes, but I'm sure they would have been equally delicious! 
The real star of dinner however was the Stuffed Cod with Shrimp and Scallop Corn Bread Stuffing, Asparagus, Red Potato and Mustard Cream Sauce.  It was just outstanding.  The cornbread stuffing was just that little bit of sweet to balance the savory and made the dish something special. 
We were too full to try dessert so we ended the evening with a night cap before heading out for the night. We tried one of their flights, sangria and an old fashioned - once again, all were delicious.

We thoroughly enjoyed our meal here.  The food and the service were both top notch and we wouldn't hesitate to come back again soon!

Universal's Volcano Bay Private Cabana Review

On a recent training in Universal Orlando Resort, agents Maci, Ashley, Aubrey and Yaritza and I rented a private cabana for the day at Universal's Volcano Bay. There are multiple locations around the park along with the option to have an upper or lower level, all of which reflect in various pricing. Agent Ashley received an email the day before informing her of where to check-in the next morning. While we were personally escorted to the cabana shortly after check in, the line at the check in location is the same as those getting towels, meaning it was not short. As expressed by an additional guest checking into a different cabana, we would have greatly appreciated a separate line, since this caused our group about a half hour wait. We're all adults and made great use of our time getting some fun pictures before the park was filled with guests, but this is important to be aware of if you are traveling with children.  We had an upper level Cabana which came with a splendid view!
