Gideon's Bakehouse

Gideon's Bakehouse at Disney Springs has been incredibly popular since it opened, with waits of up to five hours on the weekends just to grab some of these delectable delights.  Of course, we had to see what all the hype was about for ourselves so we popped over to Disney Springs on a Monday morning around opening and hopped in line.  Waits are much shorter midweek and earlier in the day, with the virtual queue not even being in use yet, our wait was about an hour, but still regularly gets up to several hours on the weekends as the popularity has not waned.
I recommend stopping here first when you arrive to Disney Springs if it is on your agenda, that way if the line is longer you can hop in the virtual queue with your phone number and shop or eat around Disney Springs while you wait.  Even if you get the virtual queue, you still have to wait in the line outside for at least 15-30 minutes.  It was a sunny morning and there isn't much shade in line, so definitely be prepared for some Florida elements.  Soon I was rounding the corner and got my first glimpse of the bake shop, which looks quite unassuming from the exterior.
Once inside, the vibe completely changes.  It's dark and a little spooky, but in the best way.  Halloween is my favorite so I was definitely loving the vibes and all about it.  They also have merchandise which is very popular as well, so be ready for anything here!
The almost-half-pound cookies and huge cake slices are on display as you walk up so you can get an idea of what you might want to order.  It was October on my first visit so the seasonal cookies were Frankenstein and Bride of Frankenstein.  In April, the cookie of the month was a Coffee Toffee flavor that my family adored! Cookies will run you $6 each while the cake slices are $9 each.  We were in a cookie mood this morning so I got a box of six cookies to take home and got five different flavors to try. They pack them up beautifully and if you can't finish them all, you can also freeze them to enjoy later!
Original Chocolate Chip Cookie
The Gideon's Original Chocolate Chip is the foundation of who we are, the first child. This recipe took 15 years to perfect and is filled with history. It is packed inside and out with a variety of Chocolates, infused with differing vanillas, and has a texture that might almost trick you into thinking you're eating Cookie Dough. This Cookie has been named everything from Best in Orlando to Best on Planet Earth, and we couldn't be prouder to hand make it from scratch for you daily.
We are very picky with our chocolate chip cookies, and this was quite delicious.  I loved how many chocolate chips there were!  For a classic cookie lover, you really can't go wrong here.

Triple Chocolate Chip
Our Triple Chocolate (which is really five kinds of chocolate) is made with fancy Callebaut and Ghirardelli chocolates, to name a few. To make it extra velvety, we pour our chocolate ganache straight into the cookie dough as we're mixing it. This is the Cookie you just want to curl up with, our most emotional Cookie.
Chocolate fans unite!  This is decadent and delightful.  The little flakes of salt pair so beautifully to bring out the chocolatey goodness here.  This is definitely rich but oh boy did I love it!

The Frankenstein and Bride of Frankenstein
The Frankenstein is a Halloween month celebration, made from pieces parts of all the candies you want in your bag, and topped with M&M’s that we lovingly place on the top to be sure you get all the colors. Break it open and you’ll find crushed Oreo Double Stuff and Chocolate Pieces.

A new flavor, created to give companionship to the Frankenstein, the Bride of Frankenstein arrives!! This almost 1/2 pound monster of a Cookie is created in the same mold as the Frank Cookie but features White Chocolate, Golden Oreos, and M&M’s!
These were both super fun!  Each bite was an exciting new adventure with so many different flavors stuffed into each cookie.  These are definitely worth checking out if you are visiting in the month of October.

Peanut Butter Crunch
This Cookie took an extra-long time to perfect. We wanted you to enjoy something that was truly set apart from the standard flavor for a PB cookie. We're very proud that our Peanut Butter Crunch is entirely peanut buttery with every bite. Not surprising since the dough is made of mostly peanut butter! It's topped with our handmade candied peanuts for the perfect amount of crunch. A must for any PB Lover.

This might have actually been my favorite of the bunch!  The saltiness of the peanuts with the sweetness of the cookie was just a perfect pairing for me.  A good peanut butter cookie is so hard to come by so this was such a delightful surprise.

The downside to the early morning visit is you likely miss "hot cookie hour" - but when we went on a Sunday, our callback to get in line was timed perfectly with this amazing time of day here.  For $10, you receive a warm chocolate chip cookie topped with vanilla ice cream.  That was a "heck yes" from me and oh my gosh, this is THE WAY to have a classic Gideon's cookie.  YUM.  This is only available in store from 2-3pm or 7-8pm.
After hearing about the amazingness of the cakes, I had to give those a try as well.  The flavors change daily but I've now tried their classic vanilla and the cookie butter slices.  They are a bit sweet but so so good in texture and cake to frosting ratio.  $9 might seem like a lot for a slice of cake, but they are huge - it took three of us eating a slice and we still didn't finish it!

And not to miss out on a reason to celebrate the spooky season, Gideon's even had a special treat whipped up for Halfway to Halloween weekend!  This pumpkin cheesecake snack cake was wonderful.  The flavors were well balanced and it was so nice to get a little taste of pumpkin in the spring!

Cruising with a Baby: A Complete Guide

You took a baby on a cruise!? Yep, and I'd do it again knowing what I know now. So, say goodbye to months of research - Everything you need to know is here!! One of the biggest challenges of traveling with a baby is planning what you need to bring. I wanted to share what worked for us, and hopefully help others who are planning their cruise! Remember, babies can only cruise after their 6-month birthday on sailings from the U.S. If you are going transatlantic, or have more than three days out at sea, they must be 12 months old by the first day of your cruise. Pre-Cruise   We flew to the cruise port, and I couldn’t bring all the food and snacks I needed, so I placed an Instacart order for pick up near the port. I chose Publix in Cocoa Beach which is a few miles from Port Canaveral. I placed the order a few days before we left home, and set the pickup time to 11:00 a.m. I ordered formula, a box of diapers, swim diapers, bottle brush, dish soap, baby food, and baby snacks. I also broug...

The landscaping is gorgeous with flowers like plumerias, and tall swaying palm trees. Whether you want to just kick back and relax or go for a thrilling banana boat ride, this port has something for everyone.
