Disney has today announced plans to mark the 15th anniversary of Disney's Animal Kingdom on Earth Day, 4/22/2013.  Here is what you can expect (from the official Disney Parks Blog):
*Special opening ceremony – Meet at the Tree of Life at 8:40 a.m., to hear from Josh D’Amaro, Vice President of Disney’s Animal Kingdom; Dr. Jackie Ogden, Vice President of Animals, Science and Environment; and Joe Rohde, Senior Vice President of Walt Disney Imagineering Creative. Make sure you arrive early for this!
*Earth Day “Party for the Planet” festivities – Special interactive activities that focus on animals and nature will take place throughout the park from 9 a.m.-5 p.m.
*Artists and other vendors will present their work on in Africa and on Discovery Island, with their work available for purchase.
*Opportunity to purchase special 15th anniversary merchandise, available in limited quantities.
*Special food & beverage.

The new meet and greet attraction at Disney's Animal Kingdom is looking set to open in mid-May 2013.  Called 'Adventurers Outpost,' the new location will give you a chance to meet Mickey and Minnie in a new indoor environment. Around the same time, Daisy and Donald Duck will both be moving to the Discovery Island boat dock area to appear together. Making way for their arrival, the Winnie the Pooh characters will be moving to Camp Minnie-Mickey.
Nearly the complete left-side of Africa in Disney's Animal Kingdom is now walled off as construction begins on building the new Festival of the Lion King Theater. The relocation of the theater from Camp Minnie-Mickey to Africa is part of the expansion plans for Animal Kingdom, which have so far been based around the AVATAR project announcement. It is expected that the show will continue to be performed in Camp Minnie-Mickey until the new theater is ready, minimizing any downtime for the popular show.

The Maji pool bar at Disney's Animal Kingdom Lodge, Kidani Village now offers a hot food menu daily from 11am to 5pm. Menu items include a Turkey Panini, South African-style Cuban Sandwich and Vegetarian Falafel.  The full menu can be viewed at WDWMagic.

The Anandapur Ice Cream Truck located along the walkway to Expedition Everest at Disney's Animal Kingdom will be closing for a refurbishment from 4/14/2013 to 5/23/2013.

You Must Be This Tall to Ride... Universal Orlando Resort Edition

Universal Orlando Resort has branded itself as the more grown-up vacation destination in central Florida. With advertising campaigns like "kids grow up, so do vacations" and "grow bolder", it should be no surprise that there are many attractions at the Universal Theme Parks with height requirements.  If you're visiting the Universal Orlando Theme Parks with little ones, it's very important to familiarize yourself with the ride height requirements so you know which attractions your little ones can, and can't ride, based on their height. You'll find these helpful signs with height requirements for all of the attractions when you enter the Universal Orlando Theme Parks. Universal Studios Florida 34 inches - E.T. Morimoto Asia at Disney Springs

Morimoto Asia at Disney Springs is one of my go-to spots for a great meal.  The restaurant itself is beautiful and I've had so many great meals there over the years. Chef Morimoto is a relatively well-known chef after appearing on Iron Chef America as one of the original Iron Chefs, so when he opened a restaurant at Disney Springs I was so excited to give it a try being a fan of the show and of Chef Morimoto.  This restaurant brings his masterful Asian cuisine to Florida in his first "Pan-Asian" concept.  With 20-foot chandeliers and glass walls giving a peek into the kitchen and a sushi bar upstairs, there is something to catch everyone's eye here. In October, they had specialty spooky cocktails on the menu that we just couldn't resist trying! One was pumpkin and lychee based and the other was grapefruit and rose and they were both good but the black magic was definitely our favorite.  Twisted Pumpkin: absolut elyx, pumpkin spiced liqueur, lychee, liqueur, house

Frontera Cocina at Disney Springs

Frontera Cocina is one of the many restaurants you will find with a celebrity chef at Disney Springs, this one is brought to you by seven-time James Beard award winner, Rick Bayless.  The warm colors and open atmosphere is very welcoming for a contemporary Mexican dining experience.  Reservations are highly suggested and can be made via My Disney Experience or the Open Table app and the restaurant is typically open for lunch and dinner from 11am to 11pm daily.   We had lunch here on a Monday afternoon and the restaurant wasn't too terribly busy at all, which was a welcome change from the hustle and bustle of the weekend. We settled in at a table in the middle of the restaurant and got ready for the meal ahead.  While somehow I missed a photo, we did start our meal with $5 margaritas which is definitely a great deal while on Disney property!  This was a "Margarita Monday" special and we would highly recommend it!  We also opted for some chips and salsa and some queso. Now,
